Sweet Potato Crunch

Best to remove from the fridge 20-30 minutes prior to putting in oven otherwise does not seem to cook right.

Base

Ingredients

  • 3 cups cooked, mashed sweet potatoes (recommend the orange ones)
  • 2 eggs
  • teaspoon vanilla
  • 2/3 cup sugar
  • 1/2 cup milk
  • 1/4 butter

Cooking Instructions

Cook and mash potatoes, mix in other ingredients in a buttered dish


Top

Ingredients

  • 1 cup brown sugar
  • 1/4 butter
  • 1/2 cup flour
  • 1 cup chopped pecans

Cooking Instructions

  • mix sugar, flour, and nuts then cut in butter (not soft or melted), spread mix on top of potatoes, then cook in the oven for 15-20 minutes.
